Amaranth Domestication

Amaranth is a highly nutritious grain, used around the world as a staple and equal in nutrition to rice.

Amaranth is a central American domesticate, and its history is also tied up with Aztec religion, as contributing writer Nicoletta Maestri shows us in her new article, "The Origin and Use of Amaranth in Ancient Mesoamerica", the latest in About.com's ever-expanding Guide to Plant Domestication.
